    150ml Egg white
    100g Mushroom
    50g Spinach 
    Seasoning as required
    1. Mix ingredients in a bowl. 
    2. Add a few sprays of 1 cal spray oil in pan. Heat pan and turn on your grill also. 
    3. Once pan is warm enough (not too hot else it will stick and burn), pour in egg white mixture including the chopped mushroom and spinach.
    4. Let the omelette cook the underneath side for a good 2 to 3 mins and then place under grill. I keep the omelette under the grill longer as its more of a gentle heat … the top will brown but shouldn't burn. 
    5. After a good 3 to 4 minutes (keep checking whilst under grill), take out and the edges of omelette should be coming away slightly from pan. You should then be able to serve up using a medium size spatula. As the mushrooms are heavy and its just egg white, you will need to carefully remove from pan else it will tear and fall apart.
