Ingredients:

35g whole oats
Handful of chopped spinach
1/2 small onion, diced
50g of chestnut mushrooms
70g light halloumi
Chopped parsley for garnish
Garlic/chillies to taste

Method of cooking:

Sauté the onions (and garlic and chillies if using) in a pan (1 kcal spray) for 2 mins.
Add the oats and keep stirring for another 2 mins till oats are lightly toasted.
Add 70ml of water and bring to boil, then reduce heat to a simmer. Season well. Oats should be a porridge consistency. Add the chopped spinach and stir through. Take off heat.
Sauté mushrooms in a separate pan, seasoned with salt and pepper.
Grill halloumi on both sides just before serving.
Garnish with parsley
